Homemade Fresh Southern Salsa! Who’s ready to taste the best salsa you have ever put in your mouth! Seriously this stuff is like crack. Not that I know what crack is like but from all the programs on television I can gather it’s pretty addicting. I always like to have salsa stashed away in my freezer because you never really know when you will have to entertain or when you might have late night cravings. I usually make a few batches and freeze them in containers with the dates on them. Key to getting that done is making the time y’all! These day’s time is very precious and extra time is very rare, hehe!

If you are into preparing food you could make batches of mild, medium and hot. I just make all of my salsa hot because here in the South that is how we roll. I think all the parents in the South put hot sauce in our bottles as babies to prepare us for out future in Louisiana. This means once we go out into the world as adults we realize just how BLAND every thing else is. Which is why it’s always good to carry this and this with you at all times while traveling!

Enough of this, let’s get to the nitty gritty – how to make this bowl of awesome sauce.

I am very proud to say that all of the ingredients came from our garden except the lime and red pepper flakes. We do have a lime tree but it’s not ready yet. So if you ever eat my salsa just know it was made with lot’s of love!

First of all I would love for you to meet the wisest kid in the world. Campbells Soup Company “discovered” the Wisest kid in the WHOLE world. Not only is he 8, but he is eternally 8.

Now many of you may NOT know this and it may be a huge shocker but I do have a wonderful kid! He is 13 years old and let me tell you he sure is wise. Sometimes a little too wise but what can I say, he takes after me.

There is a really great period in a kid’s life where they think they are wiser than anyone else. It’s actually the cutest time in my eyes.

Meet the Wisest kid! There is a huge purpose behind this campaign and that is to stress that kids do have wise things to say.

When I think of my son’s wisest moment there is one particular event that always pops into my head. I would say this took place around 7 years old, a very wise 7 years old.

My lil one went spend the night with his “pop” and when they were going to bed my dad said, “Say a prayer for Pop tonight please.”

Lil one said ” I can’t Pop”.

My dad said WHY! He said “Well because I never learned a prayer with the word Pop in it.”

How cute and wise is that! My dad called me the next morning almost in tears because he thought is was so amazing.

Happy Memorial Day to all of my loved ones, friends and internet family! I am not sure if you get thanked enough but I am here to say THANK YOU! For all you have done and still do.
Sometimes I think people forget about what other’s have done for us to actually have the freedom we have. Maybe I feel a little different because many people in my family has been in the service and have gone away for long periods of time. Can you imagine the bravery a person has inside of their soul to KNOW when they sign up for this that they possibly will have to leave one day.  THAT IS DEDICATION.

Not the kind of dedication it takes to get up each morning and work out. It’s completely different. I just hope and pray today you are praying for those still gone or have passed and not thinking it’s a holiday to bar-b-q and drink.

Let’s really do what we can today.

Wave your flags and always thank those who have served. Even if it’s been 10 years. We will never know what they go through or have been through.

Well whatduhwe have here. Candied citrus peels. I know it’s not a good ole snickers bar, but it’s actually a little better and could possibly be healthier. Hmmm, now that I think about it I did use a lot little bit of sugar. While I was cutting the skin off of  I decided to try a teeny tiny bite of a peeling (urghhh not a good thing). I just looked at myself in an imaginary mirror and said “Jade, just wait till you cook these suckers down”. Wanna know how I made them and what my final thoughts are? Let’s get started.

ingredients

♥ 1 naval orange
♥ 2 lemons
♥ 1 grapefruit
♥ baby jars
♥  paring knife
♥  nutmeg (personal amount)
♥  sugar (personal amount)

The day before I soak my baby bottles in ice cold water. This helps loosen the paper.
(Trust me it works)

I like to use a paring knife for this next step but if you don’t have one use whatever knife you have.  You want to peel the fruit carefully. That bitter white pith needs to stay it’s tail as much on the fruit as possible. I mean, it’s ok if “some” stay on the peels but just try to not put too much.

When you are done butchering your beautiful oranges and lemons slice them babies into strips like this. I keep them in separate piles  because I don’t like them mixed up! I sorta wish these were fruity gummy worms.

how to make candied fruit peelWhen you ready to get cray cray we will combine 4 cups of water with 2 cups of sugar in a small pot. Heat this until you see a cool looking boil and leave it for 4-5 minutes. Make sure to stir while this is going on. We want to spread out the sugar and allow it to dissolve evenly.

This is what you want to do next: 
♥ Reduce heat and simmer  for about 5-7 minutes (pop your oven on 200 degrees while this is taking place)
♥ Take them out of water and lay them on a rack to cool off
♥ Once they are cool pop these suckers in the oven to dry out. Leave them in the oven for about 1 hour
♥ When you take them out of the oven sprinkle sugar and nutmeg on them
♥ Last thing to do it EAT THEM!

Store them in a DRY location. I gave some as gifts so that is why I used little baby food jars. Mason jars work good too!
They are good for about a week

After I made mine, I put a little black pepper on them. I personally love pepper so this is not mandatory.

If you are giving them as a gift you can throw a sticky label on them to identify the citrus. I used some from Martha Stewart’s line at staples. I love these so much. I have stock in them, fa reelz!

I made brownies and threw gently placed some peels on top.

I don’t know about you but I will eat any kind of PIE that is placed in front of me. There is something especially inviting about a cool pie on a hot summer day. If you live in Louisiana then you know exactly what I mean. It’s HOT here. This past weekend I put a blanket down in my back yard and spend the whole day outside, laying on it. It was so nice to get some rays but I kept dreaming of the perfect pie which included mint, chocolate, bananas, whip cream and andes mints. I figured I would make it and share it with you!

Let’s get started with this Mint Chocolate Chip Banana Cream Pie because it’s delish!

Mint Chocolate Chip Banana Cream Pie

 1 ready made pie/two bananas/1 tub of cool whip/ frosting creations in mint chocolate/andes mints/1 box of chocolate pudding

Mix your pudding according to the directions on the back of the box. Get your powdered Mint Chocolate mix and throw that baby in there. I put the entire packet.

 Once your putting is made and the consistency is right, add it in your pie. This is the first layer.

Start slicing bananas and lay them on top of the pudding.

 Add your cool whip next.

 Crush up your Andes mints and throw those suckers right on top. Pop it in the fridge so it can set and VOILA.

Happy Happy Monday! Guess what tomorrow is?!?!? MY BIRTHDAY! It’s kinda crazy how the older you get time seems to fly by. I feel like I just had a birthday and it’s already here again! Guess I can’t complain when it’s time to open gifts! {{teehehehehe}}

So, I am always baking cinnamon rolls and biscuits, go figure! The other day I was taking some out of a can (yes, I buy them in the cans) especially when they are on sale. While I was taking them out one got caught on the can and it unraveled.  I actually think I cussed at them as if they did it on purpose! Who does that! me.

Ok, so while it’s just hanging there I decided to twist them. Hallelujah, right! How could I not think of this before? Let me show you how easy this is…

How amazing is this!!

I know this is prolly not anything new to the world but it’s new to me and it totally made me happy and smile from ear to ear! Seriously, your kids will love you even more when you give them these babies!
