This past weekend I attended the Giant Omelette Festival in my good ole home town of Abbeville. It was really interesting because I have not been in years and I didn’t remember it being such a “big” event when I was a child.
This sign is beautiful isn’t it! When you drive into Abbeville this sign is on the side of the road. One of the reasons I wanted to post this picture is because it does not look like your typical welcome sign. It’s interesting. It’s unique. It actually makes you feel like your entering someplace warm and cozy, and of course you are!

This is AMAZING! Have you ever seen a pan this big? You would not believe how big it really is in person. In the picture above, they are starting off by sauteing
50 lbs. Onions

75 Bell Peppers

4 Gallons Onion Tops

2 Gallons Parsley

1 1/2 Gallons Cooking Oil
WOW!

This lovely golden mixture above involves tons and tons of yummy eggs! Do you know every year they add one more egg to the mixture and next year they will be up to 5027 eggs~Some other things they add in the mixture are
6 1/2 Gallons Milk

52 lbs. Butter

3 Boxes Salt

2 Boxes Black Pepper

Crawfish Tails

Tabasco Pepper Sauce (to taste)

This is Ray LeMaire (former sheriff of Abbeville, also one of the chefs) and myself posing after the eggs were finished. Boy were they yummo!

Another thing that is also very fun at the festival are all the different arts and crafts they offer. I ran into this gentleman who has been coming back to the festival for years now and he will roast peanuts right there in front of you. You can’t get any fresher than that. If I could post the smell on here I would because it was fabulous. I found the machinery to be delightful to the eye and the machine is a “No.5 Royal Antique Roaster.” What a cool name, right! Hope to see you there next year!
