Well howdy hoo, Jaderbugs! Is it really Sunday night already? I couldn’t wait to share this “delish” mexican lasagna recipe with you. I cooked it last week but I am just now getting around to posting it. I posted it online and everyone wanted the recipe so let’s get to it!

Quote of the day: SAY NO ILL OF THE YEAR TILL IT IS PASSED

INGREDIENTS: 

2lbs Ground Beef
1 pack of Corn Tortillas
1 can of Rotel
1 small box (16oz) of Velveeta Cheese
2 can’s of Corn
Pinch of Paprika
1 bag of shredded Mexian Cheese
(Large Baking Dish)

Before you start anything put your oven on 350˚.
The first thing you will do is brown your beef. I like to add a pinch of Paprika and any other seasonings at this point. After your meat is completely browned you will add your rotel & corn. Cook this mixture down on high for about 10 minutes. While this is cooking down, dice up your block of velveeta cheese and melt it in the microwave. When your cheese is melted add it to the meat (slowly), corn and rotel then stir completely until it is mixed well. Cook this down on med/high for 10 minutes. Once cooked down you will start putting it together in your baking dish.

You will layer it just like you would a lasagna. Start by putting some of your mixture on the bottom then cover that mixture with corn tortillas. Complete the same steps over again until you reach the top of your baking dish. Finish it off by putting your shredded cheese on top. Bake this with no aluminum foil for 15-20 minutes or until your cheese is completely melted.
And VOILA!!!!

I can’t even find the right words to express how GOOD this is. It’s like pouring glitter and gold in your mouth while spraying your self with Chanel Chance. So you get it, right! It’s that good.

Happy Happy Monday! Guess what tomorrow is?!?!? MY BIRTHDAY! It’s kinda crazy how the older you get time seems to fly by. I feel like I just had a birthday and it’s already here again! Guess I can’t complain when it’s time to open gifts! {{teehehehehe}}

So, I am always baking cinnamon rolls and biscuits, go figure! The other day I was taking some out of a can (yes, I buy them in the cans) especially when they are on sale. While I was taking them out one got caught on the can and it unraveled.  I actually think I cussed at them as if they did it on purpose! Who does that! me.

Ok, so while it’s just hanging there I decided to twist them. Hallelujah, right! How could I not think of this before? Let me show you how easy this is…

I know this is prolly not anything new to the world but it’s new to me and it totally made me happy and smile from ear to ear! Seriously, your kids will love you even more when you give them these babies!

Happy FRIDAY! It’s good ole Memorial weekend! I figured this was the best time to post my famous Dorito Chicken recipe! It’s like being punched in the face with lot’s of yumminess. Seriously. Doritos. Chicken. Who knew how delish this would be. You know everyone in the South bakes everything! I guess

Now, I know once you see the ingredients of this baby you will feel like you gained a few LB’S! Just don’t read to much into the it! I swear! It’s one of those things you have to try (every other week)…haha

Plus that is why the SOUTH has the BEST food in the WORLD! Here is proof #1.

Ingredients:

If you want to do a bigger batch use 3pounds of chicken and two cans of cream of mushroom. That’s it.

RECIPE:

Set oven to 350˙now

2 lbs of boneless chicken breasts
1 bag of Doritos
1 can of cream of mushroom
1 can of corn
1 can of Rotel
1 16 Velveeta cheese block
1 onion
1 bellpepper
1 block of butter

1.  Boil your chicken. When it’s done shred each piece using two forks
2.  While your chicken is boiling saute your onion and bell pepper with your block of butter
3. When your veggies are soft add in your can of cream of mushroom, cook for about 10 min
4.  Once that has cooked add your can of corn and rotel, cook on low for about 10-15 min
5. While your corn and rotel are simmering cut up your cheese into cubes then slowly add them to your mixture! You want to stir the entire time you are adding them until they are fully melted.
6.  Once your cheese is melted add in your shredded chicken. MIX

Get your baking pan out, I use my lasagna dish. Spray pam on it. Coat the bottom of the pan with a little bit of the food you just cooked. Grab a handful of Dorito’s and crumble them good over this mixture. You will continue this process until the pan is full, or you run out of food (heeehehe)

It’s sorta like a lasagna if you think about it! Make sure your LAST step is adding a Dorito layer on top! Like this.

This is what it will look like in it’s LAST step. Cover with aluminum foil and pop it in the oven for 25 minutes. You will be delighted when the aroma of this starts smelling your house!

Make sure you get one of these to “snack” on while your food is cooking!

Crawfish Etouffee Recipe

I just had to share tonight’s dinner with you because it is so fabulous.  After a recent trip to California I felt it was necessary to share the EASIEST CRAWFISH ETOUFFEE recipe with my “Cali” girls since they all wanted me to cook for them.  Now, just know I made it as simple as possible so “anyone” can do it.

Étouffée or etouffee:
 (pronounced: [e.tu.fe] ay-too-fay) is a dish found in both Cajun and creole cuisine typically served with shellfish over rice. It is most popular in New Orleans and in the bayou country of the southernmost half of Louisiana.

 Ya know, Louisiana has some of the BEST food ever. Lafayette actually just won Southern Living’s tastiest town award!  Can you believe that! It’s amazing!

Let’s get started!

 Grab a bell pepper and if you like, an onion.

Start by melting 2 sticks of butter. (I know, I know) Super healthy, right! Have you ever seen Paula Deen?

 Dice your bell pepper and onion and throw them in the mix.

You KNOW I am using my “slap ya mamma” cajun seasoning. Just add a little sprinkle in the pot.

Add 2 pounds of crawfish and sautee for a while until everything becomes wilted… Ya know, a little SOFT!

After sautéing for a bout 15 minutes add a can of Campbell’s cream of mushroom soup.

Add a splash of Louisiana HOT SAUCE. (ya know us cajun’s NEVER measure)
Just add till you feel it’s spicy enough.

 Sprinkle some garlic salt (um…about a teaspoon) to add a twist of garlic in it!

Well lookie here! We have some FABULOUS food to eat! How simple and refreshing. Don’t worry if your belly feels REALLY full, it’s supposed too! You can put this on top of rice, baked potato or a juicy steak! Toast some bread and that will really finish it off.

Chicken fried steak,wait it’s noodles in WIENERS!!!

Have you ever had to beg your kids to eat? Does food get BORING? Well if so then you are in the right place! It’s like magic aliens came down and invented this. It’s really so freaky and so freaking cool at the same time! Did you ever think it was possible!

It was the funniest thing when me and my sista from another mista did these babies! I can’t lie. It felt weird pushing the “raw” noodles through the wieners. I’m not sure if it was the texture freaking me out or the fact that they looked so crazy. Sista from another mister laughed the entire time and so what should of took 10 minutes to make them took about 45 minutes. I think the most important thing is we had fun and our bellies hurt after “TRYING” all of them in the end. You know how that goes. You just have to keep eating to make sure 100 percent that they ARE good. When we realized there was none left (insert crooked lip and stank eye) we just watched toddlers and tiara’s. Let’s get started because I’m sure some kid out there NEEDS to make this.

You will need wieners, uncooked spagetti noodles and a pot with water.

Make sure you cut them all up into little pieces. Then you will stick your raw noodles through the wieners

Seriously. This is gross looking. HAHA
